Microwave Carrot Cake

This is another really easy microwave recipe. Easy to make, Quick (10 minutes cook time). I made this it was so easy !

Ingredients:

360 grams of self raising flour

360 grams of caster sugar

3 eggs

240 grams of cooking oil ( go on be healthy make it olive oil)

540 grams of shredded carrot

Shred the carrots



Add all of the ingredients together in a mixer or mixing bowl

Pour into a microwaveable dish at least 20 cms or 8 inches diameter

Place in the microwave and cook on high for 10 minutes or until firm to the touch

Allow to cool for a few minutes then turn out to cool on a wire rack

Add icing to top or slice in half and add to middle just to decorate if you wish, Serve & Eat

Enjoy

Definitely making these… wish the recipe was for fewer cupcakes so I don’t eat a dozen all by myself!!! They look amazing!

This was SO delicious!! I followed your exact recipe and I don't think it was too thick at all. It was nice and creamy and the flavors were great! My husband ate two bowlfuls and wanted more. We had plenty for leftovers. Thanks--this is a keeper.

I bought this expensive non-stick tefal grill pan BUT i can't seem to get the perfect grill marks as i used to with my cheaper cast iron pan! the non-stick is so much easier to clean although i might as well be grilling the chicken in a skillet! 🙁 is there anything i can do to make this one work as good?

I am a cilantro lover of the highest degree and this chicken looks amazing! I am highly suspicious of people who dislike cilantro .

I’ve been using ground turkey for years. I personally don’t like the taste of ground beef. Turkey will take the flavor of any seasoning you add and it is much lighter than beef. These meatballs look fantastic. Whenever I’m making spaghetti my guys always want meatballs. Pinning!
